Vegan Sponge Cake

I made this really nice Vegan sponge cake earlier. This is a bad photograph. The cake tasted really nice. :)

    I'd love to say it was my recipe but it wasn't. It's from Leah Leneman's book, "Easy Vegan Cooking" published in 1993 (updated in 1998), which is well thumbed and dog-eared in my house.

    the recipe is as follows.

    55g/2oz/quarter of a cup of Vegan Margarine (I use Pure or Vitelite)
    55g/2oz/third of a cup of raw cane sugar
    1tbs Soya Flour
    2tbs Water
    Few drops of Vanilla essence
    100g/3.5oz/three quarters of a cup plus 1 tbs wholewheat self raising flour
    Half a tsp baking powder
    15g/half an oz/1tbs cornflour (cornstarch)
    3-4 tbs Soya Milk

    Method:
    1. Cream the margarine and sugar until fluffy
    2. Mix the soya flour into the water with a fork. Mix it into the margarine mixture a little at a time. Add Vanilla essence
    3. Mix the flour, baking powder and cornflour together. Add them to the rest of the mix then add enough milk to make a batter of dropping consistency.
    4. Put batter into two 7 inch sandwich tins and back at 375F/190C/Gas Mark 5 for about 20 mins until it's firm to touch or shrinking away from the tin.

    That's from the book. What I found when I followed this recipe was that there was only enough mixture to fill one tin! So I took to making one tin only then cutting it in half to create half a cake.. OR doubling the recipe to create another tray.
